<br /></div>
<div>
For one, we had torn down the old pen, which wasn't tall enough anyway. In the past, we've always dealt with escaping chickens. They would inevitably fly over at some point and end up as a chew toy in the dog yard, or running loose in the alley and the neighbors' yards. </div>
<div>
<br /></div>
<div>
Completely free range chickens are great...in the country. In town, not so much. People have this tendency to get upset when your chickens tear up their flower beds while searching for the tasty bugs under the soil. I can understand. If the chickens got into my perennial beds, I would be quite irritated. </div>
<div>
<br /></div>
<div>
That always ended with out there in the middle of the night after the chickens had all settled down well on the roost. We'd juggle a flashlight and a pair of scissors while we plucked hens off the roost and trimmed their flight feathers. </div>
<div>
<br /></div>
<div>
This didn't always work. We found out rather quickly that flight feathers is a relative term. Yes birds need them if they plan to fly high and long. However, they do not need them if all they plan to do is get themselves to the top of the fence so they can flutter down on the other side in the pursuit of trouble. </div>
<div>
<br /></div>
<div>
So the next night would find us out there with flash light and scissors again, this time trimming tail feathers as well.</div>
<div>
<br /></div>
<div>
We soon discovered that determined hens don't need those either.</div>
<div>
<br /></div>
<div>
So as we looked at our old pen space and realized that this time, something had to be different. </div>
<div>
<br /></div>
<div>
I looked at the stack of cattle panels we had leaning up (left over from our goat days) and remembered the hoop shelters we had built for the goats. </div>
<div>
<br /></div>
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEinsXH-WnZ9j6M1llVNC296Ssqu949LcFo2aLdr1_62N7EPd9E1hop7vCISsZz2MzpThfu5xq_JPt6x77lNFRtOG1JtiTaVl_i8buoVcQQ80GdiqmmlB7BBq3g0pS6DKwYPselxnjiAUBc/s1600/100_6045.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEinsXH-WnZ9j6M1llVNC296Ssqu949LcFo2aLdr1_62N7EPd9E1hop7vCISsZz2MzpThfu5xq_JPt6x77lNFRtOG1JtiTaVl_i8buoVcQQ80GdiqmmlB7BBq3g0pS6DKwYPselxnjiAUBc/s1600/100_6045.JPG" height="240" width="320" /></a></div>
<br />
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhBpqxZZ31K_O7bqE0sbA1S0dOxtb9O7Qm0myEf-_yJ79_b-QAMdOGGRmVP64ewISj1FEO_neeyTgiDS66FFiPlW6hL-tFS17GZ_5iYS69E_-gvzMu8y2RaBGiiTgwRHyJBatwhwpz8jL8/s1600/100_6042.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhBpqxZZ31K_O7bqE0sbA1S0dOxtb9O7Qm0myEf-_yJ79_b-QAMdOGGRmVP64ewISj1FEO_neeyTgiDS66FFiPlW6hL-tFS17GZ_5iYS69E_-gvzMu8y2RaBGiiTgwRHyJBatwhwpz8jL8/s1600/100_6042.JPG" height="240" width="320" /></a></div>
<div>
<br /></div>
<div>
<br /></div>
<div>
Why not hoop a chicken pen? It seemed like a good idea.</div>
<div>
<br /></div>
<div>
We began our endeavor. Thankfully, we've built several hoop shelters in the past, so we have the whole setting up hoops down to an art. </div>
<div>
<br /></div>
<div>
It didn't take us long. Poles pounded into the ground, panels pulled into a U shape and then hooked with bungie cords so they were easier to carry into place. The resulting hoops set between poles and then the bungie removed. A little adjustment once set to line things up and viola, we had the hoops up.</div>
<div>
<br /></div>
<div>
Now, when you buy cattle panels, they are marked at 16 feet long. However, this is not always the case. Apparently the tape measures don't always work at the places that make these things. Some are shorter by almost a full foot. This made our hoops different heights and drove my OCD personality crazy. However, setting the hoops isn't necessarily easy work, so thankfully there are enough other people in my head to overrule the nitpicky one and tell her to just live with it.</div>
<div>
<br /></div>
<div>
After the hoops came the chicken wire. Lots of chicken wire and lots of wire zip ties. </div>
<div>
<br /></div>
<div>
Our arms and hands were scraped and cut by endless chicken wire and my fingers ached from fighting with the zip ties, but we got it done.</div>
<div>
<br /></div>
<div>
We now have our hooped chicken pen that none of the hens can fly out of. No more trying to herd chickens home (they don't herd well), no more trimming feather in the dark, no more squawky, flappy, doggy chew toys, no more neighbors wondering why our chickens are loose again. </div>
<div>

No, its nothing special or fancy, but it will do the job of keeping the chickens where they are supposed to be. We plan on expanding it he rest of the way down the fence line as we can. </div>

Wow, it has certainly been a long time since I posted on this blog. A lot has happened. My writing took off and I spend large amounts of time working on that. </div>
<div>
<br /></div>
<div>
We thought last summer we wanted to step away from the backyard livestock for a while and sold everything off, even the chickens. </div>
<div>
<br /></div>
<div>
We realized what a mistake that was. Where we aren't going to get back into goats for the foreseeable future, we are getting chickens back and we're going to add in a couple of rabbits. <br /><br />And of course, we will have our garden and our canning. </div>

I am so excited to finally have it published. Anyone who is interested in fantasy (or knows someone who is), check it out. Tell your friends, spread the word. :) </span><br />
<span style="font-size: large;"><br /></span><br />
<span style="font-size: large;">It is available on both Kindle and on Nook. It will be available in paperback soon. If you decide to buy it, please leave an honest review when you are done. As an Indie Author, I count on word of mouth to get my book out there.</span><br />

<span style="font-size: large;"><br />
</span><br />
<span style="font-size: large;">Belly Bean (Bella) finally had her babies last week. She had twins, one buckling and one doeling. She kidded with no complications and is wonderful on the milk stand. Her udder came in beautiful and she is producing well for a first freshener.</span><br />
<span style="font-size: large;"><br />
</span><br />
<span style="font-size: large;">We also have a little flock of twelve babies chickens. A mixture of Production Reds, Ameraucana and Lavender Ameraucana. </span><br />
<span style="font-size: large;"><br />
</span><br />
<span style="font-size: large;">With nice weather and the all of the babies, we've spent a lot of time outside. But, as my mother reminded me, I really needed to blog so any followers don't think that Bella is still laying around like an orca.</span><br />
<span style="font-size: large;"><br />
</span><br />
<span style="font-size: large;">Introducing, Oat Bucket Farm Just A Kiss (Bella's registered name is CrossRoads End Lady Antebellum)</span><br />

I'm starting to wonder how many she has in there. And of course, we have started worrying about every little thing. Not because she is acting off or anything like that, but because...well what can I say, we love her and want everything to go perfect with her. </span><br />
<span style="font-size: large;"><br />
</span><br />
<span style="font-size: large;">Besides, worrying about how she is carrying her tail, and worrying about her hopping on and off the milkstand for grain (she won't be starting this evening), and worrying whether she is eating enough (or too much) and everything else, gives us something to do while we wait for the day the kids arrive. Of course, kids being born here is nothing new, but every year, we just can't help ourselves. </span><br />
<span style="font-size: large;"><br />
</span><br />
<span style="font-size: large;">We worry, and we stare at goat butts and udders.</span><br />
<br />
<span style="font-size: large;">And of course there are pics of the expectant whale...er...goat.</span><br />
<span style="font-size: large;"><br />
</span><br />
<span style="font-size: large;">The ever widening, Belly Bean.</span><br />

It was really cold and windy today, but that's okay. Today was the day to make bread.</span><br />
<span style="font-size: large;"><br />
</span><br />
<span style="font-size: large;">Rye bread on the left, multi-grain whole wheat bread on the right, and cinnamon-raisin bread in the back.</span><br />

<span style="font-size: large;"><br />
</span><br />
<span style="font-size: large;">We got blood pulled on Missy and sent off to see if she settled this time.When we sent off in December, she came back as open. Although Bella did come back pregnant (and is showing a nice little baby bump now), and they both came back CAE negative, WOOT!</span><br />
<span style="font-size: large;"><br />
</span><br />
<span style="font-size: large;">We also got their feet trimmed, Bella got her 100 days pregnant worming, got them both copper bolused, and we got the barn all cleaned. And, we even got a bunch of clothes hung on the line to dry. It almost felt like spring out there (you hush, I can too pretend it's spring in January) Feels good to get so much done out there.</span><br />
<span style="font-size: large;"><br />
</span><br />
<span style="font-size: large;">And, just because pics are always good, here are a couple of pics of Bella's baby belly. We have taken to calling her Belly Bean. :) She is due March 23rd.</span><br />

The first snow of the season had just passed and it was very cold and windy. We stopped at the gas station out on the highway and I went into pay. The front of the store is set back, and underneath the over hang rests the ice cooler and a bench. </span><br />

<span style="font-size: large;">As I walked past the bench, a little black kitty came out from under it. I crouched down to pet her, but though she wound around the legs of the bench and acted like she really wanted to be friendly, she wouldn't quite let me touch her. </span><br />
<span style="font-size: large;"><br />
</span><br />
<span style="font-size: large;">I went on in to pay and asked the lady behind the counter who's kitty that was. She said she didn't know and that the kitty must have been dumped and that it had been out there for two or three days. That put the poor kitty out in the cold, huddled under the bench beside the ice cooler through some of our coldest weather this winter. Snow was on the ground and the wind bitter.</span><br />
<span style="font-size: large;"><br />
</span><br />
<span style="font-size: large;">So on my way back out I stopped and talked to the kitty. She finally came close enough to let me touch her and I scooped her up. She tensed for only a second and then melted into my arms. She was so cold. In the van she went and we turned around and took her home.</span><br />
<span style="font-size: large;"><br />
</span><br />
<span style="font-size: large;">Closer inspection revealed that she was indeed a she and probably in the 3 to 4 month age range. She is incredibly sweet and relaxed. Took to the dogs immediately and doesn't seem to have a mean bone in her body. The resident cats all spat and growled and she just kind of looked around like, "What?" </span><br />
<span style="font-size: large;"><br />
</span><br />
<span style="font-size: large;">She sneezed and wheezed the first week here, but plenty of food, water and warmth has pretty much restored her health. She uses the litter box like she is suppose to and even loves the kids.Though short haired, she is still very puffy. So we named her, Miss Puff Kitty. Puff for short.</span><br />
<span style="font-size: large;"><br />
</span><br />
<span style="font-size: large;">When Christmas day came a few days later, instead of huddling on the cold ground, hungry and homeless, she had the warmth of a new home, surrounded by her new family as she skittered among the scraps of wrapping paper.</span><br />
<span style="font-size: large;"><br />
</span><br />
<span style="font-size: large;">Here is Miss Puff Kitty, reclining on the back of the couch downstairs. Happy to have a home and warm place to sleep.</span><br />

The bright orange sun gleamed off the ice collected on the trees. Some of the trees looked like winter fairies had decorated the tops of the trees with little lights. Other trees looked like they had fire in the tops. Mother nature has some beautiful displays.</span><br />

Really creates a Christmas mood. The kids had a blast running and playing in it. Then after much rolling, tackling, and snowball throwing, the kids were ready to come and peal off their wet socks and gloves and snow-caked shoes and settled down with hot cups of cocoa. The goats on the other and, were less than thrilled. The chickens didn't poke their heads out of the coop all day and the cats (who are inside/outside cats) are miffed.</span><br />

The house gets a fresh, top to bottom scrubbing, lavish meals are planned, family gathers. It always seem so warm and cozy to me, even when the weather is cold and windy. Okay, so maybe it's not so warm and cozy when your dumping ice out of buckets and what not but you get my meaning. </span></div><div style="text-align: center;"><span class="Apple-style-span" style="font-size: large;"><br />
</span></div><div style="text-align: center;"><span class="Apple-style-span" style="font-size: large;">This year the house got more than a scrubbing. We repainted the living room walls. They used to be a really dark red and there were gold curtains. Now, its a beautiful, creamy, buttery yellow with white lace curtains that let the light in. Feels so much better in here. I love the light, I love the bigger, nicer feel to the room. </span></div><div style="text-align: center;"><span class="Apple-style-span" style="font-size: large;"><br />
</span></div><div style="text-align: center;"><span class="Apple-style-span" style="font-size: large;">This time of year, many are planning their Thanksgiving day feast. But what do you do when you are sick to death of turkey and ham but don't still want something light for dinner? The answer is, you make Rolled Chicken. It's a bit of work, but the meal is worth it.</span></div><div style="text-align: center;"><span class="Apple-style-span" style="font-size: large;"><br />
</span></div><div style="text-align: center;"><span class="Apple-style-span" style="font-size: large;">For Rolled Chicken</span></div><div style="text-align: center;"><span class="Apple-style-span" style="font-size: large;"><br />
</span></div><div style="text-align: center;"><span class="Apple-style-span" style="font-size: large;">You chop small and fry in olive oil:</span></div><div style="text-align: center;"><span class="Apple-style-span" style="font-size: large;"><br />
</span></div><div style="text-align: center;"><span class="Apple-style-span" style="font-size: large;">Green peppers (any color of bell pepper you like)</span></div><div style="text-align: center;"><span class="Apple-style-span" style="font-size: large;">Onions </span></div><div style="text-align: center;"><span class="Apple-style-span" style="font-size: large;">carrots</span></div><div style="text-align: center;"><span class="Apple-style-span" style="font-size: large;">mushrooms </span></div><div style="text-align: center;"><span class="Apple-style-span" style="font-size: large;">and garlic</span></div><div style="text-align: center;"><span class="Apple-style-span" style="font-size: large;"><br />
</span></div><div style="text-align: center;"><span class="Apple-style-span" style="font-size: large;">season it all with a palm full of parsley, a dash or two of cilantro, salt, pepper, and oregano. (how much of each is determined by your taster)</span></div><br />
<br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEg4nFGpAVamVOiJGh41nF1f4d_eEL0r9DXzL4aHBYMWCfbF9qSjpccsbvaMp4kOlYIzzKUc1Z_pmNRfrsRvS-b1FQ80vYplVLbCI5mgt26b3OCYHhZuU0BgloOOtmo0oBts8A_C3e3kGcg/s1600/101_0071.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEg4nFGpAVamVOiJGh41nF1f4d_eEL0r9DXzL4aHBYMWCfbF9qSjpccsbvaMp4kOlYIzzKUc1Z_pmNRfrsRvS-b1FQ80vYplVLbCI5mgt26b3OCYHhZuU0BgloOOtmo0oBts8A_C3e3kGcg/s320/101_0071.JPG" width="320" /></a></div><br />
<br />
<div style="text-align: center;"><span class="Apple-style-span" style="font-size: large;">How much of each is dependent on how many chicken breasts you have, how much you want to put inside the chicken rolls and so on and so forth. Having extra isn't a bad thing.</span></div><div style="text-align: center;"><span class="Apple-style-span" style="font-size: large;"><br />
</span></div><div style="text-align: center;"><span class="Apple-style-span" style="font-size: large;">While that is finishing up frying (you want the carrots tender), place a chicken breast inside a large plastic bag (we use a gallon sized), lay it on the counter, grab your rolling pin, a beat the tar out of it until it's good and flat. Do that with each chicken breast. This is a great stress reliever. </span></div><br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhM3QBcHFAYdIDMB5SXBmznQ7sDCm7o9YmDq9wwgtSQt6yqEeFkc0OcPxhm_UIkn27R8uEQgjFjM7023_FR2cxUh5YC82sQ2wnYBR9-nk4Ah26GhewvrGEtRumDKJcjI9bWSlZHlMOLO3Y/s1600/101_0072.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhM3QBcHFAYdIDMB5SXBmznQ7sDCm7o9YmDq9wwgtSQt6yqEeFkc0OcPxhm_UIkn27R8uEQgjFjM7023_FR2cxUh5YC82sQ2wnYBR9-nk4Ah26GhewvrGEtRumDKJcjI9bWSlZHlMOLO3Y/s320/101_0072.JPG" width="320" /></a></div><br />
<br />
<br />
<div style="text-align: center;"><span class="Apple-style-span" style="font-size: large;">When they are sufficiently subdued, lay them out on a couple of cookie sheets. Then spread them with spicy mustard. It must be the brown spicy mustard, regular mustard just doesn't cut it.</span></div><br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgA_G8f_uZzBki0ykqqJuLhvJncJLjOKDPPndBS1i2qX34Q8BA-Xjlf-y60YOQ8l_rFMRj_mcNEorGW8NK4nOJYIeP6H1wnRSkTMUutHMkE4Ecq_dSsX8mwcrYt8ERqUcFvb7Bw1DReHxA/s1600/101_0073.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgA_G8f_uZzBki0ykqqJuLhvJncJLjOKDPPndBS1i2qX34Q8BA-Xjlf-y60YOQ8l_rFMRj_mcNEorGW8NK4nOJYIeP6H1wnRSkTMUutHMkE4Ecq_dSsX8mwcrYt8ERqUcFvb7Bw1DReHxA/s320/101_0073.JPG" width="320" /></a></div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;"><br />
</div><br />
<div style="text-align: center;"><span class="Apple-style-span" style="font-size: large;">Then spread the veggie mixture over the chicken breasts.</span></div><br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEggH-KNjz-EO4tjNSHheb3N9a2NtZqw6AIvrXuhu1i7eXF-eSDUEPOHmy4rRIy4EzEOD8MXOsaALFkpmcR0GLfEbdM9uuZyWtgLc80bi0C-og7oj3607mFCdN-6XwygMxmuUDfJord9_pA/s1600/101_0074.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEggH-KNjz-EO4tjNSHheb3N9a2NtZqw6AIvrXuhu1i7eXF-eSDUEPOHmy4rRIy4EzEOD8MXOsaALFkpmcR0GLfEbdM9uuZyWtgLc80bi0C-og7oj3607mFCdN-6XwygMxmuUDfJord9_pA/s320/101_0074.JPG" width="320" /></a></div><br />
<br />
<br />
<div style="text-align: center;"><span class="Apple-style-span" style="font-size: large;">Then, starting on one end, roll the chicken up and secure them with tooth picks. This we have found is an acquired skill. Don't be discouraged if it takes a bit of trial and error to get the toothpicks to perform as expected.</span></div><div style="text-align: center;"><span class="Apple-style-span" style="font-size: large;"><br />
</span></div><div style="text-align: center;"><span class="Apple-style-span" style="font-size: large;">Then, beat an egg with 1/4 cup of water. Dip the chicken in the egg/water mixture and roll in bread crumbs seasoned with a little salt,pepper, and parsley. Then place in the pan recently vacated by the yummy veggies and brown them. You may need to add a bit more oil.</span></div><br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjbehmUDPQc1CzOE3kKE2riHFYJCHf4H3iNUXM_POlOi17PRcE3YVYGVOheSPmnJYaxUkyW0jVMncizenE56iDQrKSb8GZtPKB_X_a9ElmzEwT0X6KLywTlpyBTZvwPUCP9FMpQeNsNU6E/s1600/101_0045.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjbehmUDPQc1CzOE3kKE2riHFYJCHf4H3iNUXM_POlOi17PRcE3YVYGVOheSPmnJYaxUkyW0jVMncizenE56iDQrKSb8GZtPKB_X_a9ElmzEwT0X6KLywTlpyBTZvwPUCP9FMpQeNsNU6E/s320/101_0045.JPG" width="320" /></a></div><div class="separator" style="clear: both; text-align: center;"><br />

You got to see them when they graduated to the big chicken pen. And now, you get to see them all grown up. The hens are now laying and the one rooster we kept has grown into a handsome fellow. We kept him because he has a low voice that he rarely uses, he is easy on his hens and protective of them while being a gentleman with us. He is the reigning (and only) King.</span></div><div style="text-align: center;"><span class="Apple-style-span" style="font-size: large;"><br />

We didn't make it out of the forties today. Considering we were burning to a crisp just a month ago, I am loving it! It was over cast, the leaves are starting to turn, and the wind was actually cold today. The goats were berserk, dashing around and snorting, dogs were wild with play. Even the chickens seemed to be enjoying it, though they are starting to molt. There are so many feathers flying around the chicken pen, it looks like a hen exploded.</span><br />
<span class="Apple-style-span" style="font-size: large;"><br />
</span><br />
<span class="Apple-style-span" style="font-size: large;">It was perfect weather for Rancher Stew. Love this dish served up with cornbread. </span><br />
<span class="Apple-style-span" style="font-size: large;"><br />
</span><br />
<span class="Apple-style-span" style="font-size: large;">You take a pound of ground meat (beef is good, goat is better) and fry it up.</span><br />
<span class="Apple-style-span" style="font-size: large;"><br />
</span><br />
<span class="Apple-style-span" style="font-size: large;">Add one quart of tomatoes (you can use store bought if you have to) and enough liquid to equal 4 cups, we use the liquid with the tomatoes as part of the measured liquid. Add one packet of Lipton Onion Soup Mix, 3 teaspoons of chili powder, a couple of good shakes of Worcestershire Sauce, a sprinkle of dried parsley, and as many chopped carrots, potatoes and celery as you want. </span><br />
<br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiXxBbZNvJy12HNDZaH1ORw1bB7leld_OFdgd2vusr_EVHb_HmMNWlCmQsAxcAW3luJ72lv0h_YI3TW1_i7_e4Xp0cJ8jmCVYY_vB1SzgdmY79VbJMQiMr6nobtat5TbDTeAa4oeJNua2E/s1600/101_0071.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiXxBbZNvJy12HNDZaH1ORw1bB7leld_OFdgd2vusr_EVHb_HmMNWlCmQsAxcAW3luJ72lv0h_YI3TW1_i7_e4Xp0cJ8jmCVYY_vB1SzgdmY79VbJMQiMr6nobtat5TbDTeAa4oeJNua2E/s320/101_0071.JPG" width="320" /></a></div><br />
<br />
<span class="Apple-style-span" style="font-size: large;">Bring it too a boil, then turn down to a simmer and let cook until veggies are tender.</span><br />
<span class="Apple-style-span" style="font-size: large;"><br />
</span><br />
<span class="Apple-style-span" style="font-size: large;">Then serve it up. Yum! </span><br />
<br />

They are also incredibly pretty with all of their colors, seasonings, and sprigs of dill. We also got the first few jars of tomatoes ran through the canner. Our tomatoes are producing, but the plants don't look as good as they could (see the post before this one). I hope they give us enough. We also made peach jelly and put up several jars of that. </span><br />
<br />

</div><div class="separator" style="clear: both; text-align: center;">Quart jar of pretty dill pickles</div><br />

</div><div class="separator" style="clear: both; text-align: center;">Quarts of tomatoes and pints of peach jelly waiting to be carried to the pantry</div><br />
<br />
<span class="Apple-style-span" style="font-size: large;">Green beans and mulberry jelly are slated to be done today. We have spent the last several mornings, doing a garden version of 'downward facing dog' and lunge positions and such while we practically stand on our heads picking grocery bag after grocery bag of green beans. We are being over run by green beans, but we ran short last year, so the abundance this year is welcome. Even if it is a million degrees by nine in the morning.</span><br />
<span class="Apple-style-span" style="font-size: large;"><br />
</span><br />
<span class="Apple-style-span" style="font-size: large;">This life is a lot of hard work, but it's so worth it. I love watching the pantry fill with rows of things we have grown and processed in our little kitchen. I love opening an egg carton to the brown,cream,white, speckled, blue, and green eggs that our chickens lay. And I love seeing the half gallon jars of healthy, fresh milk in the fridge.</span><br />
<br />

It has been so hot, we can barely get the animal chores done and things picked before we have to seek the relief of the air conditioning. The bindweed mother ship and pig weed mother ship have taken full advantage of the fact that the heat is keeping us from spending good quantities of time ripping their evil minions out by their sorry roots. </span><br />
<span class="Apple-style-span" style="font-size: large;"><br />
</span><br />
<span class="Apple-style-span" style="font-size: large;">In the battle for the garden, the green beans, cucumbers and squash are holding their own. The tomatoes appear to be on the front lines and are doing their best, but without some help, even they would be in trouble.The bell peppers need lots of help. They just don't have what it takes to stand up to the climbing, strangling onslaught of the bind weed or the shadowing presence of the tree-like pig weed. So that is where we spend the most time weeding, doing our best to shore up the peppers' defenses against the determined and tenacious weed army.</span><br />
<span class="Apple-style-span" style="font-size: large;"><br />
</span><br />
<span class="Apple-style-span" style="font-size: large;">We don't normally have this much trouble with weeds in our garden, but the combination of not getting the straw in soon enough and the heat hitting so early and staying for an extended visit, hampered the head start we usually have on them. We usually have them under control, before they ever get a root hold in the garden.</span><br />
<span class="Apple-style-span" style="font-size: large;"><br />
</span><br />
<span class="Apple-style-span" style="font-size: large;">Despite the horrible heat, the drought that has forced us to completely replace rainfall with water from the hose, and the evil invasion of bindweed and pig weed, the garden continues to produce well...much to our continued surprise. On two separate mornings we have went into the garden and walked out with thirty pounds of cucumbers. There have been several smaller pickings as well. We have picked and picked and picked green beans. The tomatoes are finally coming ready as well.</span><br />

<br />
<span class="Apple-style-span" style="font-size: large;">Because we don't have a ton of space, we plant the bush variety of both green beans and cucumbers. We have had so much luck with them, year after year, that even if we ever get a place with more room we will stick with the bush varieties. I am extremely impressed with the Contender bush beans. Even in this heat, and even though they have been producing lots of beans for about a month, the plants still look great and are still putting on tons of beans. The couple of rows of Blue Lakes that we planted look good, but they have barely given a handful of beans. I'm glad most of the green beans are Contenders.</span><br />

Wonderful, red yummies. I love pickled beets. Before they can be pickled though, they have to be par boiled. After we were done par boiling, we had several quarts of beet water or rather beet juice. A few cups had to be used in the pickling, but after that there was still quarts of it left. We really didn't want to waste it. I stood there and looked at the juice and thought, beets are tasty and kind of sweet...what about making jelly with it?</span><br />
<span class="Apple-style-span" style="font-size: large;"><br />
</span><br />
<span class="Apple-style-span" style="font-size: large;">After some consideration, we decided this would be an excellent use to put the left over juice to. I jumped on the computer and looked up beet jelly, and sure enough, even though we had never heard of such a thing and beet jelly seemed like a new invention to us, someone else had already thought it. Not only had it already been thought of, but there were numerous recipes for it. I was thankful for the recipes. I would never have thought of putting a half a cup of lemon juice into it.</span><br />
<span class="Apple-style-span" style="font-size: large;"><br />
</span><br />
<span class="Apple-style-span" style="font-size: large;">So armed with a recipe and the beet juice, we went to work. It turned out wonderful! A pretty red in the jar, it tastes absolutely fantastic! I am so happy we didn't have to pour away all of that juice. We had planned to use some in soups and stews and breads, but even with that there would have been too much. Now all of that extra is sitting in jars in the pantry. </span><br />
<span class="Apple-style-span" style="font-size: large;"><br />
</span><br />
<span class="Apple-style-span" style="font-size: large;">I can tell I will need to grow more beets next year. Not only are pickled beets a much loved food, but now beet jelly is a favorite and often requested jelly. My three year old was trying to eat some straight out of the jar with his hands.</span><br />

</div><div class="separator" style="clear: both; text-align: center;"><span class="Apple-style-span" style="font-size: large;">From the other side. </span></div><div class="separator" style="clear: both; text-align: center;"><span class="Apple-style-span" style="font-size: large;"><br />
</span></div><div class="separator" style="clear: both; text-align: center;"><br />
</div><span class="Apple-style-span" style="font-size: large;">Beet Jelly:</span><br />
<span class="Apple-style-span" style="font-size: large;"><br />
</span><br />
<span class="Apple-style-span" style="font-size: large;">4 cups beet juice</span><br />
<span class="Apple-style-span" style="font-size: large;">1/2 cup lemon juice</span><br />
<span class="Apple-style-span" style="font-size: large;">6cups sugar</span><br />
<span class="Apple-style-span" style="font-size: large;">1 box Sure Jell</span><br />
<span class="Apple-style-span" style="font-size: large;"><br />
</span><br />
<span class="Apple-style-span" style="font-size: large;">You can either slice and cook six large beets until done in enough water to make 4 cups, or you can save the juice after par boiling beets for pickling. If you use the water left over from par boiling, save back a beet to cut up and toss in the water and boil until soft for richer color and flavor.</span><br />
<span class="Apple-style-span" style="font-size: large;"><br />
</span><br />
<span class="Apple-style-span" style="font-size: large;">Boil plain water, pour into clean bowl and place lids and rings into the hot water and set aside.</span><br />
<span class="Apple-style-span" style="font-size: large;"><br />
</span><br />
<span class="Apple-style-span" style="font-size: large;">Add lemon juice to the beet juice. Mix in Sure Jell and bring to a boil. Stir in sugar and stir constantly until it reaches a boil again. Continue stirring while it boils hard for 3 minutes. Ladle into clean jars (really? Do clean jars really need to be mentioned? Is there someone actually out there that would ladle it into dirty jars?) Fish lids and rings out of their bowl of hot water, place them on the jars (after making sure to wipe clean the rim and threads on the jar). Water bath them for 5 minutes. Remove from water bath and let cool.</span><br />

It is holding up amazingly well in the awful heat we have been having. Its wonderful in salad, but there is no way we can eat that much salad fast enough to consume it all before it goes bad. So a bunch went into the freezer. We treat the leafy tops like spinach when we blanch and freeze it. The stalks we treat like broccoli when we blanch and freeze it. We eat the stalks like any other vegetable. The leaves we use like we would frozen spinach. It goes into dips, manicotti, enchiladas, etc. Usually right along with spinach.</span><br />

Now that life has leveled out a bit and I have time to breathe, I can get back to blogging.</span><br />
<span class="Apple-style-span" style="font-size: large;"><br />
</span><br />
<span class="Apple-style-span" style="font-size: large;">The graduation part of the title refers to the Jr chickens. They got big enough to graduate to the big chicken pen! They are very happy being able to run around and hunt down bugs. They are proper looking chickens now. They have all of their feathers and are just smaller versions of the older ladies.</span><br />
<br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEipeoN9eV8305GlrQP_S_DUjgnOHATUnh-7KP8qbg0oaqMbXrSGyCIxPeIED7fVyXsIQIgboXk3Jzz5cI7vICaQ5Fj4Ti2Wy9z_3xsnpw2043KCFNDTDNKc-ivECafdceTYXrWlwYlt_bQ/s1600/100_8900.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="300" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEipeoN9eV8305GlrQP_S_DUjgnOHATUnh-7KP8qbg0oaqMbXrSGyCIxPeIED7fVyXsIQIgboXk3Jzz5cI7vICaQ5Fj4Ti2Wy9z_3xsnpw2043KCFNDTDNKc-ivECafdceTYXrWlwYlt_bQ/s400/100_8900.jpg" width="400" /></a></div><br />
<br />
<br />
<span class="Apple-style-span" style="font-size: large;">And now for the goodbye. We buried Lucy, one of our flock matriarchs last night. She was seven years old and still laid an egg on occasion. She was my favorite hen. She came here as a day old chick and lived her entire life here. I don't know if it was old age that took her, or if she just couldn't take the constant triple digit temperatures. Either way, it was sad to find her departed from this world during evening chores. RIP Lucy, you will be missed old girl.</span><br />

Now granted, it was a simple soft cheese but we didn't want to do anything to complicated for our first foray into the world of fresh, home-made, goat cheese.</span></div><br />
<br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjxVqBxXrAaq8oq5vCHfHjMiViYoPJ91Ul31w5Vyl9NPQdtQYP9rGYqfn8Sxk04CNgi3tL38QdBkfMzgsFRtqf0i3YdDeAKV7m9KsLIG0ic-RtYpb42aSpDE1F9kbzK7YomtzJz-3Ikj9M/s1600/100_8842.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjxVqBxXrAaq8oq5vCHfHjMiViYoPJ91Ul31w5Vyl9NPQdtQYP9rGYqfn8Sxk04CNgi3tL38QdBkfMzgsFRtqf0i3YdDeAKV7m9KsLIG0ic-RtYpb42aSpDE1F9kbzK7YomtzJz-3Ikj9M/s320/100_8842.JPG" width="320" /></a></div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div class="separator" style="clear: both; text-align: center;"><br />
</div><div style="text-align: center;"><span class="Apple-style-span" style="font-size: large;">We used one gallon of whole, fresh, raw, goat milk. We heated it to 190 degrees F. Once it reached that temp, we removed it from the heat, added a half a cup of white vinegar and mixed it well. Then we covered it and let it sit. When it had cooled to 100 degrees, we lined a colander with a white pillow case ( if you do this, make sure its one that has no fabric softener on it) and ladled it into the pillow case. Do not pour it, it will splash everywhere. </span></div><div style="text-align: center;"><br />
</div><div style="text-align: center;"><span class="Apple-style-span" style="font-size: large;">Once you have it all in the pillow case, pick up the pillow case and work it all into one corner and squeeze. Then hang the pillow case (we hung it in the shower) for one and half to two hours - longer if you want drier cheese. </span></div><span class="Apple-style-span" style="font-size: large;"><br />
</span><br />
<div style="text-align: center;"><span class="Apple-style-span" style="font-size: large;">This cheese is extremely mild. We seasoned it with garlic,onion,paprika,parsley, basil, salt and pepper. The we shredded up a bunch of crab in it. We used imitation crab because, quite frankly, real crab is too expensive for this little hobby-homestead. </span></div><div style="text-align: center;"><span class="Apple-style-span" style="font-size: large;"><br />
</span></div><div style="text-align: center;"><span class="Apple-style-span" style="font-size: large;">This herb crab cheese is beyond delicious on crackers. </span> </div><br />

I got the Cajeta (caramel sauce) recipe off the goat forum at Homesteading Today, however I don't remember exactly who posted it, so I don't know who to credit with this delicious, smooth,creamy, wonderfulest (it is to a word) caramel recipe in the world.</span></div><div style="text-align: left;"><span class="Apple-style-span" style="font-size: large;"><br />
</span></div><br />
<div style="text-align: left;"><span class="Apple-style-span" style="-webkit-border-horizontal-spacing: 1px; -webkit-border-vertical-spacing: 1px; font-family: verdana, geneva, lucida, 'lucida grande', arial, helvetica, sans-serif;"><span class="Apple-style-span" style="font-size: large;">Brownies:<br style="line-height: 18px;" /><br style="line-height: 18px;" />1 cup of butter<br style="line-height: 18px;" />2 cup of sugar<br style="line-height: 18px;" />2 teaspoons vanilla<br style="line-height: 18px;" />4 eggs<br style="line-height: 18px;" />1 cup flour<br style="line-height: 18px;" />2/3 cup cocoa<br style="line-height: 18px;" />1/4 teaspoon baking powder<br style="line-height: 18px;" />1/4 teaspoon baking soda<br style="line-height: 18px;" />1/2 teaspoon salt<br style="line-height: 18px;" /><br style="line-height: 18px;" />Melt butter. Mix flour,cocoa,baking powder,baking soda,and salt. In separate bowl, mix sugar,vanilla,and butter. Add eggs. Slowly add flour mixture. Grease pan. Pour in most of the batter, with holding just a little (maybe a cup)<br style="line-height: 18px;" /><br style="line-height: 18px;" />Cheesecake:<br style="line-height: 18px;" /><br style="line-height: 18px;" />8 ounces cream cheese<br style="line-height: 18px;" />1/2 cup powdered sugar<br style="line-height: 18px;" />1 egg white<br style="line-height: 18px;" />1/2 teaspoon vanilla<br style="line-height: 18px;" /><br style="line-height: 18px;" />Beat cream cheese and powdered sugar together for 3 minutes. Add egg white and vanilla and beat for an additional 2 minutes.<br style="line-height: 18px;" /><br style="line-height: 18px;" />Pour cream cheese mixture over brownie batter, trying to cover as much of the brownie surface as possible. Pour with held brownie batter over that, drizzling it around. Take a butter knife and drag through the cream cheese and brownie batter. You don't need to go real deep. Go lengthwise, then crosswise.<br style="line-height: 18px;" /><br style="line-height: 18px;" />Bake at 350* until a knife inserted into the middle comes out clean, there maybe a small amount of cheesecake clinging to the knife even when its done.</span></span></div><div style="text-align: left;"><span class="Apple-style-span" style="-webkit-border-horizontal-spacing: 1px; -webkit-border-vertical-spacing: 1px; font-family: verdana, geneva, lucida, 'lucida grande', arial, helvetica, sans-serif;"><span class="Apple-style-span" style="font-size: large;"><br />
</span></span></div><div style="text-align: left;"><span class="Apple-style-span" style="-webkit-border-horizontal-spacing: 1px; -webkit-border-vertical-spacing: 1px; font-family: verdana, geneva, lucida, 'lucida grande', arial, helvetica, sans-serif;"><span class="Apple-style-span" style="font-size: large;">Cajeta:<br style="line-height: 18px;" /><br style="line-height: 18px;" />In large pan put in 2 qts milk,2 cups sugar,and 1 teaspoon vanilla. Bring to a boil. When it reaches a boil, remove from heat. Dissolve 1/2 teaspoon baking soda in 1 tablespoon water and add to milk mixture. It will bubble up quite a bit.<br style="line-height: 18px;" /><br style="line-height: 18px;" />Let rest about 10 minutes or until bubbles are gone. When bubbles have subsided, return to heat and bring to a brisk simmer/low boil. Stir very frequently. When the mixture turns pale golden, begin stirring even more often. Once it starts to thicken more, you will need to stir pretty constant. It needs to be simmering even while stirring. It will reduce and become a rich caramel color and become a medium thick sauce. You can put a couple of drops into cold water, if a soft ball forms, it is ready. About 240* on a candy thermometer. If its too thin, return to heat. If its too thick, add hot water ny the tablespoon until it is the proper thickness.</span></span></div><div style="text-align: left;"><span class="Apple-style-span" style="-webkit-border-horizontal-spacing: 1px; -webkit-border-vertical-spacing: 1px; color: #545454; font-family: verdana, geneva, lucida, 'lucida grande', arial, helvetica, sans-serif; font-size: 12px;"><br />

Cajeta is a Mexican caramel sauce, made from goat milk and oh my, it is so wonderfully yummy! It was easier to make than we expected. Next we are going to tackle cheese. Now, the caramel sauce is fattening enough, but we couldn't leave it at that. Oh no. We had to put it over cheesecake swirl brownies.</span><br />

I am really not sure what took us so long, but I am glad its finally done. And we already have baby asparagus popping up!</span><br />
<span class="Apple-style-span" style="font-size: large;"><br />
</span><br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEigTBNHOujEIUsP-O8vEtkJ4H7nbE9bCB6u_XWx3W_mtVIShiyYPnREr7VK3sQRM1y_QSIARyxT4zJIgzToH_kMFY4hk-xKsj00kygURYx8d5Oty2l3GWAZDWrPTvxdpNDKm9zXmV1LyHQ/s1600/100_8414.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><span class="Apple-style-span" style="font-size: large;"><img border="0" height="300" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEigTBNHOujEIUsP-O8vEtkJ4H7nbE9bCB6u_XWx3W_mtVIShiyYPnREr7VK3sQRM1y_QSIARyxT4zJIgzToH_kMFY4hk-xKsj00kygURYx8d5Oty2l3GWAZDWrPTvxdpNDKm9zXmV1LyHQ/s400/100_8414.JPG" width="400" /></span></a></div><span class="Apple-style-span" style="font-size: large;"><br />
</span><br />
<span class="Apple-style-span" style="font-size: large;"><br />
</span><br />
<span class="Apple-style-span" style="font-size: large;">And, we brought in twelve new baby chickens this year! Its been a couple of years since we had any chicks here. They sure are cute buggers. We have a mix of Barred Rocks, Brown Leghorns, and Black Australorp. I really wanted some Production Reds and White Rocks as well, but the farm store was out of them.</span><br />
<span class="Apple-style-span" style="font-size: large;"><br />
</span><br />
<span class="Apple-style-span" style="font-size: large;">My youngest loved getting to hold the babies when they first came home.</span><br />
<span class="Apple-style-span" style="font-size: large;"><br />

</span><br />
<span class="Apple-style-span" style="font-size: large;"><br />
</span><br />
<span class="Apple-style-span" style="font-size: large;">We fixed up an old metal rabbit hutch for them. Its ugly I know, but we are going to paint it. We actually got it almost six years ago. It was on freecycle and we used a full sized van to pick it up. It is incredibly heavy and six feet long. We barely got it wedged in the side door. We tied the side door shut and drove an hour home the back way with it hanging partially out the side door,lol. Hey it worked, its here. It has house rabbits and injured adult chickens in the past. For the last couple of years it has house nothing and we almost got rid of it earlier in the year. But we have learned from past experiences that you never get rid of animal related stuff because the minute you do, you will need it. So instead, we moved it across the yard so that its next to the garage, took out the wire floor in the enclosed half, put in a wood floor, put in a heat lamp (the cord runs through the window into the garage) and installed baby chickens.</span><br />
